Jackfruit Curry Recipe

Ingredients:

  • 1 can (20 oz) young green jackfruit in water or brine (not ripe)
  • 2 tablespoons oil (vegetable or coconut oil)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit (adjust to taste)
  • 1 medium tomato, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup coconut milk
  • Fresh cilantro for garnish
  • Lemon juice (optional)

Instructions:

  1. Prepare the Jackfruit:
  • Drain the canned jackfruit and rinse it under cold water. Cut the jackfruit into smaller pieces, removing any tough cores if necessary.
  1. Cook the Spices:
  • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  1. Sauté Aromatics:
  • Add the chopped onion and sauté until it turns golden brown. Then add the minced garlic, grated ginger, and green chilies. Sauté for another 1-2 minutes until fragrant.
  1. Add Tomatoes and Spices:
